I am a big fan of the Jeffrey Gaines version of "In Your Eyes". I also really like the Dixie Chicks cover of Fleetwood Mac's "Landslide". Which is NOT to say I don't like the original. Quite frankly...the DC version is more in my range and easier to sing along w/. I also like the Fugees cover of "Killing Me Softly" (I do that one at Karaoke a lot).
